TEMPEH PROTEIN POWER BITES

INGREDIENTS

  • ½ block Noble Bean Tempeh (120g), finely crumbled or grated

  • ½ cup natural peanut butter (or almond butter)

  • ¼ cup maple syrup (or date syrup)

  • ¼ cup rolled oats

  • ¼ cup Botanica Organic Plant Protein Powder (chocolate or vanilla both work!)

  • 2 tbsp chia seeds or ground flaxseed

  • 2 tbsp mini dark chocolate chips (optional but recommended)

  • Pinch of sea salt

  • Splash of vanilla extract (optional)

15 minutes + chilling

INSTRUCTIONS

  1. Steam the crumbled tempeh for 5 minutes (optional, but improves texture). Let cool.

  2. 2.In a bowl, mix together nut butter, maple syrup, and vanilla.

  3. Add in steamed tempeh, oats, protein powder, seeds, chocolate chips, and sea salt. Mix well until it forms a sticky dough.

  4. If too dry, add a splash of plant milk. If too wet, add a bit more oats or protein powder.

  5. 5.Roll into ~1-inch balls and place on a tray.

  6. Chill in the fridge for 30 minutes to set.

Store in an airtight container in the fridge for up to 5 days.
