

Ramen, Reinvented! This isn’t your average comfort bowl.
Inspired by @oteliapremium’s protein pasta, we’ve reimagined a classic: creating a hearty and nourishing Tempeh Ramen that delivers over 45 g of plant protein per serving.
INGREDIENTS
• 1 block Noble Bean Tempeh (240 g), cubed
• 100 g @oteliapremium Protein Pasta
• 2 tbsp tamari or soy sauce
• 1 tbsp maple syrup
• 1 tbsp sesame oil
• 4 cups vegetable broth
• 2 carrots, diced
• 2 cups mushrooms (shiitake or cremini), sliced
• 1 cup spinach
• 2 green onions, chopped
• Fresh cilantro, for garnish
• Optional: grated ginger, garlic, or star anise for extra depth

INSTRUCTIONS
1. Cook the tempeh: Toss cubes with tamari, maple syrup, and sesame oil. Pan-fry until golden and slightly crisp.
2. Cook the pasta: Follow package instructions, then set aside.
3. Prepare the broth: In a pot, bring the vegetable broth to a gentle boil. Add carrots, mushrooms, spinach and any optional aromatics. Simmer 8–10 min.
4. Assemble the bowl: Divide pasta into bowls, pour over the broth and veggies, and top with tempeh.
Garnish with green onions and cilantro.
